When resizing or otherwise editing a digital picture, how can I preserve the original properties embedded in the image, such as date and time?

Hi Jason,
Images properties are also named or abstracted as Exif datas ( even though they contain IPTC datas).
These properties can be red an exported from menu File / Image properties.
They can be preserved only for some file as jpeg, and you have to specify it in menu Tools / Preferences / Saving
When you save a jpeg picture, in the dialog box, you can also check or uncheck : Preserve EXIF/IPTC data.
