Is there an unmask sharp function in 6.5.2? I can't find one.
If not, is there a way of adding it?

i think you had better to search with unsharpen mask in the research tool.
Antonio has already answered for this existing tool with an other name.
You can also simulate a "high pass filter" with a formula in the Arithmetic plugin :

which can be done with the Arithmetic plugin in the PF6 release :
